These easy banana chocolate chip muffins are my favorite treat to make on weekend mornings. They only take about 30 minutes from start to finish (including baking time!) and are good for breakfast, dessert, or snacks.
I’ve always preferred banana muffins to banana bread because they take about 1/3 of the time in the oven that bread takes, they cook more evenly (at least in my experience), and they’re already pre-portioned – so no slicing! If you do prefer to make this into a bread, you can follow the same recipe – just pour the batter into a loaf pan and extend the cooking time to 50-60 minutes.
Banana Chocolate Chip Muffins
Makes 12 muffins
Prep time: 10 minutes
Cook time: 20 minutes
Ingredients
- 2-3 very ripe bananas (the squishier, the better!)
- 1/3 cup butter, melted
- 1/8 teaspoon salt
- 1 teaspoon baking soda
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg, beaten
- 1 1/2 cups all-purpose flour
- 1 cup chocolate chips or chunks (optional, but why wouldn’t you include them?! I like to use dark chocolate.)
- 1 cup walnuts (optional)
Directions
- Preheat oven to 350°F and grease a muffin tin.
- In a large bowl, mash the bananas with a fork, then mix in the melted butter.
- Stir in the salt, baking soda, and sugar, then mix in the vanilla extract and beaten egg.
- Mix in the flour.
- Fold in the chocolate chips and walnuts (if using).
- Distribute the batter evenly into muffin tins. If you’d like, you can sprinkle additional chocolate chips and/or walnuts on top of each muffin.
- Bake for 18-22 minutes, until edges become slightly brown and a toothpick inserted into a muffin comes out clean.
